Serve this salty, umami-rich skin-contact Aligoté with an icy chill and you might be able to approximate perihelion — the sensation of being coldest when closest to the sun. Dried pear / bergamot / ginger. Much different than classic expressions of this grape. Aged in neutral French oak barrels after 45 days of skin contact.
