分 桃 (Fēn Táo) is very near and dear to us, with the peaches coming from down the road in Fredericksburg, Texas. The varieties are June Gold and Texas Royal, grown at Vogel Orchard. This year, we took about 4,000 pounds of peaches and macerated them by hand. We then added barrel-aged wild ale and refermented the peaches to total dryness in a foudre. Finally, we racked the beer off of the peaches for bottle conditioning. The result is a tart, highly aromatic and flavorful fruited wild ale that captures the decadent character of Texas Hill Country peaches
